  • 2 kg raw mango
  • 2 tbsp turmeric powder
  • 2 tbsp fennel
  • 250 grams mustard oil or as required
  • 200 grams salt on 1250 grams mango pieces
  • 100 grams yellow mustard
  • 1 tbsp red chilli powder
  • 1 teaspoon fenugreek
  • 1 teaspoon asafoetida

How to Make Mango Pickle

1. First of all wash the mangoes thoroughly and then wipe them with a clean dry cloth. There should not be even a little water left in the mango. If you want, you can also dry the mangoes under the fan for some time.

2. Now with the help of a cutter, cut the mangoes into pieces of desired size. Now we will remove the seeds from these pieces. Most of the seeds come out automatically when cut, but those that have not come out should be removed. Now dry the cut mangoes in the sun for 4 hours.

3. After drying in the sun, the mango slices should be weighed once. Generally 175 grams of salt is added to 1 kg of mango slices. If you add less salt, the pickle will not be correct and durable. Therefore, it is good to weigh. Now we will add salt and turmeric to the mango and mix it well and keep it in the sun for 2 days.

4. After 2 days, we will add masala to the mango. To prepare the masala, grind mustard seeds and lightly fry fennel seeds and then grind them coarsely and also grind fenugreek.

5. Now we will add all the spices to the pickle and mix them well. Add red chilli powder, asafoetida and mustard oil to the pickle and mix them well and keep the pickle in the sun for 2 days.

6. When we keep the pickle in the sun, the oil of the pickle cooks automatically. The taste and aroma of pickle made in this way is very good. You can add a little less or more spices to the pickle according to your taste.

7. Now after 2 days, we will fill the pickle in a glass jar. If the oil is less after filling the pickle in the jar, then we will add a little more oil to it. If the amount of oil in the pickle is sufficient, then the pickle never gets spoiled.

8. We have to take care that the pickle box is tightly closed and do not put a wet spoon or wet hand in the pickle. The pickle jar should be shaken a little sometimes and if possible, the pickle jar should also be kept in the sun for a short time.
